Last weekend saw a riot of activity at Treseren with the creation of a new summer wedding menu and recipe tasting evening. Emma and her great friend, Angie – both passionate cooks – whipped up a delicious menu for friends to sample ahead of the summer weddings booked with us this year.
Beautiful Calligraphy
Joining the Treseren team, Kati Scalet, fabulous graphic designer and calligrapher, of
Scalet Paperie created the beautiful menus and place cards and styled the table with exotic blooms from Treseren’s garden. These flowers of the magnolia family, have bloomed this year in abundance – they are so striking and we loved the ambience they created for the table setting.
Kati’s beautiful calligraphy name cards and printed menus graced the table and became a centre piece for each setting. Showcasing her work, she created two versions for us; the first set up was very simple with flowing type and torn edges. We loved the simplicity. Anybody wanting to create a clean, almost Scandi vibe to their wedding table would love these.
The second set of calligraphy name cards and menus featured Scalet Paperie’s signature hand foiling technique. Created with copper foil, and each one individually crafted, we totally fell in love with these. It was no surprise that all our guests wanted to take theirs home!
The Food
And now to the food! To begin the evening, Emma and Angie wanted to trial the new Treseren canapés – the perfect start to any summer wedding menu. Flavour is so important – we wanted to make sure each little bite was packed full of great taste. Guests were treated to beetroot blinis, the beets slow roasted with Angie’s homemade quince paste, to give just a little sweetness and served with horseradish cream.
The homemade, fluffy blinis were then served with lemon and cracked black pepper cream, gorgeous smoked salmon from Tregida Smokehouse and dill. Just perfect with a glass of champagne. Additionally, the small tortilla squares with aioli, worked perfectly alongside the smoked salmon.
Our seared beef and horseradish cream on crackers also proved to be incredibly tasty, the chives giving that extra bite. And the classic, hand made filo cranberry and brie parcels were much loved too.
And so, on to the mains! We served a delicious, slow cooked Italian style lamb alongside a vegan paella accompanied by lemon and rosemary potatoes and asparagus with a romesco sauce.
The paella was really popular, not just amongst the vegetarian diners. Such a fresh and summery dish and definitely finding a place on this summer’s welcome feast menus.
To finish, Angie had made a delicious Italian inspired chocolate cake, served with a chocolate glaze and whipped cream, subtly flavoured with coffee on the side. It was totally delicious.
We had the most fabulous evening with great friends, food, and wine and we can’t wait to re-create the canapés and new recipes on the summer wedding menu for all the couples and their guests getting married at Treseren this year.
We also highly recommend Scalet Paperie to create beautiful calligraphy place settings – it completely transformed the table and helped set the tone to make the evening something really special.
